So I make these all the time. They are soo good & only 250 calories so I thought I would share the recipe with you. They all start the same: Sausage, Shredded Potatoes, Cheese & Egg Beaters & you can add whatever else you want. If you have a smartphone, download the app My Fitness Pal. You can scan in items you eat & cook with to create recipes & everything. This is also where I keep track of my food.
So here is the recipe:
1 12oz container Pork Sausage, cooked
1/2 bag of Shredded Potatoes
1/4cup Shredded Cheese
1cup Quinoa, cooked
1container Egg Beaters
Cook the sausage through adding seasoning as needed. Then add the quinoa and cook for another 2 min or so. This is also the place where you can add veggies & anything else you like. Once cooked, pour into a bowl and add the potatoes & cheese. Pour into muffin tins, make sure to spray a little Pam on them! Pour the egg beaters over the top and bake at 425 for 10mins then knock down the temp to 375 and cook for about 5 more minutes & your done!
This recipe makes 9 so you will have some extras that store perfect in the fridge till you need them. Quick & easy breakfast!
