Motivational Monday!

This week is all about:
 Healthy Super Bowl Snacks!

I dabble in catering so I love food! And if you've read here for a while, you know I really, really love food...a lot! I'm also one of those; if your gonna have a piece of cake, have a real fat peice of cake, not that light crap kinda gal, so trying to healthy things up is sorta something I'm working on....I can Pin the hell outa some healthy stuff though ;)

Honestly, I look forward to who's performing at the Super Bowl, more than the actual game.

My go to's for any sorta sports watching party is usually geared toward the male perspective....so that's usually

Chips & dip
Wings
Cheese plate
Cocktail dogs
Burgers

So for healthy alternatives, let's start with these:

Fruit salad, I do mine with whatever's in season and too make it a tad on the sweeter side, add a tbsp of fat free/sugar free vanilla pudding powder.

Burger wise, I love Jennie O's turkey burgers. They are delicious & filling and usually I go without a bun and just pile on the veggies & ketchup. You can't go wrong

Nowadays, they make all sorta of healthier chips, so find one that you like and just do an easy salsa or mix up some Greek yogurt and one of those ranch powder packets. You could even dip some veggies into that.

Wings are actually your friend...skinless wings grilled with some garlic or lemon pepper and they are delicious. You could even opt for some skewered shrimp or chicken.

Skinnytaste is an awesome website I use often. You can search recipes and they even have a while section geared right toward Super Bowl.

Whatever your food choices, just try to eat smaller portions and remember...it's one day...it's not going to wreck everything you've done to this point if you happen to overindulge, just make sure to start the next day back on track!

Share your recipes with me! What do you skinny up for a party like this? Let's give each other some ideas!!!!

Asian Lettuce Wraps

I told ya'll I was gonna come up with something delicious with Ground Turkey Breast....cause well, the hubby hates it ( yeah, he's nuts.....) so, I bounced around a few ideas until I realized I was craving me some lettuce wraps....mmmmm, PF. Changs are the best and although not crazy in calories, they are loaded with sodium, which let me tell you, is not a help in the weight loss department, for me anyways....so I came up with these bad boys and they were soooooo yummy! I even made a big batch to have for lunches and things along the week!

Asian Lettuce Wraps
Serves 6

1pkg Jenni-O Ground Turkey Breast
1 can of Whole Water chestnuts
3 Green Onions
1 cup Shredded Carrots
2Tbsp Hoisin Sauce (low sodium version)
2Tbsp Soy Sauce (low sodium version)

Saute veggies on med-high then add the ground turkey breast. Saute till cooked through and add the sauces. Cook for another 2-3min then serve on a piece of iceberg lettuce.

Enjoy!

Super easy and at only just 145cals per serving and half the sodium as the restaurant ones, you can indulge a bit and have 2, I did! I also had mine with some strawberries to sweeten the deal....You could also had a bunch more veggies, this is all I just cared to add...

Recipe & The Big 30!

First off, I have a tasty recipe for you! I call it Confetti Meatloaf. It is delicious!!! I made it tonight & the hubs was on board! I added leftover quinoa to it to but that's not in the original recipe. I also coupon & have a bazillion of those Kraft Fresh Takes cheese/breadcrumb combo.
Confetti Meatloaf: serves 6
1lb Jenni-O Ground Turkey
1cup diced peppers
1/2 bag of Kraft Fresh Takes Italian Mix (mix both together & use half)
1/4c eggbeaters
2tbsp Ketchup
Sprinkle of Italian Seasoning

Mix well and put into a baking dish. Bake covered at 425' for about 40min. When it's almost done, put ketchup on and bake uncovered till crisp.

And now on for other news...

I turn the Big THREE O in June. I'm a little sad cause, who wants to turn 30, really? But I am a little happy cause I spent my 20's getting married & pretty much making & breastfeeding children, lol
I was hoping I'd be at goal (130) by my 30th but that doesn't look like it's gonna happen...I will settle for 30lbs less of me by then so I started today with a little challenge: 30lbs in 13 weeks. It's a little over 2lbs a week loss which is doable, I just have to be strict with myself. Which is hard seeing as I haven't managed to do it yet....sooooooo

Here I go, starting over again with diet & exercise. I'm okay with it, I do it everyday...start over. I make myself reset so that no matter how the day went, I start the next day with the right attitude & mindset. I will do this, because, well I have no other options. I won't go back to what I was before...I am headed into my 30's with a different lifestyle & outlook....

I think 30 is gonna be the start of a New Me!

Skinny Recipes

I have some Skinny Recipes for you! First one is something I have made before...sorta on accident. I am an italian girl & I love me some chicken parm but it's loaded up with all sorts of things I just can't have. So I skinnied it up one night & I've been doing it this way ever since....

Skinny Chicken Parm: serves 2-3
Ingredients:
1.5lbs Chicken Breasts (3 in a pack), cut up
1/4c Italian breadcrumbs
1tbsp butter
1c Marinara Sauce
Fresh Parsley
Pam cooking spray

Brown the chicken with salt, pepper and some of my Tastefully Simple Dried Tomato Garlic Pesto Seasoning. Once it's almost done, add the butter & breadcrumbs then last minute add sauce...and serve! Sometimes I eat this alone or put it over a little pasta. For 1 serving of the chicken it's only 271cals! What?!!!!

The next recipe is for cake...yes cake. Sometimes all I want is a piece of freakin' cake! So I found this on Pinterest....I'm addicted...it's sad...anyways...here you go!

Skinny Cake: serves 12
Ingredients:
1box of Funfetti Cake Mix (you can do any cake mix)
1can Sprite Zero (again, any soda will do but im trying to keep calories low)
Icing: 1/2container cool whip & 1/4c vanilla icing (for whole cake)

Mix soda & cake mix together & bake as directed. Once completely cooled, frost & enjoy! This bad boy is only 192cals per slice...yum!

Another salad...

So I purchased one of those new salads from Lean Cuisine...it was on sale & I gave in...I got the southwest one...it was okay but for the cost you could pretty much buy all the stuff and make like 5 salads...so that's just what I did!
Ingredients:
Romaine Lettuce
1/2c black beans
1/4c corn
Handful of chopped peppers (I always have some diced and ready to go in the freezer)
4oz Chicken Breast (my husband grilled some breasts with a little bbq sauce on them so I chopped that up)
1 1/2tbsp Crispy Onions
I take all the veggies & saute in a pan, add the chicken & pour over lettuce!
This is a side by side comparison of the 2 salads. One on the left is the Lean Cuisine and the one on the right is my version.
Calories: 260 / 352
Fat: 9gms / 6gms
Sodium: 590gms / 368gms
Protien: 18gms / 30gms
Although the LC is lower in calories, my version has less sodium, less fat and almost double the protien! And it was hella delicious!
Enjoy!

Recipes!

I have some more recipes for you guys! The first one is a Greek Style Ground Pork Pita I kinda winged last minute cause a friend came to visit. I wouldn't normally use ground pork but it's what was thawed. When you do make this, although pork was delicious, I would use ground turkey and save yourself about 60cals a pita!
Ingredients: serves 6-9
White Pita Bread (cut in halves)
1lb Ground Pork
Spinach & Herb Seasoning (tastefully simple, I sell this and it's awesome...all the spices are!)
Diced tomatoes
Thin sliced cucumbers
Greek sauce (I made this too, again substitute where needed. I made this with what I had so save calories where you can)
1/4c Mayo, 1/2c sour cream, 2tbsp seasoning from above & grated cucumbers, salt & pepper to taste
Romaine lettuce
1oz Reduced fat feta cheese per pita
Brown the pork and season with spinach & herb & tomatoes. Fill pita with mixture, lettuce & veggies,1oz of cheese & 1tbsp of dressing & Enjoy! Only 385cals for one half of a pita. I also made a quick pasta salad to go with it that was made up of orzo, tomatoes, cucumbers & greek salad dressing making the meal 500cals.
This second pic & recipe is my version of the Panera Asian Chicken Salad. I was introduced to this salad & fell in love! It's amazeballs....but it's like 400 something calories for a salad!? I just don't get it so I quickly figured out how to skinny this thing up a bit. Here it is:
Ingredients: serves 1
3oz of Chicken (cooked)
Romaine Lettuce, chopped
1/4c Chow Mein Noodles
2tbsp Sliced Almonds
Sprinkle of Sesame Seeds
2tbsp Panera Asian Dressing
Now first off, the dressing is what makes this salad & I discovered it can be found at Target in the cold veggie section, holla! And it's only 60cals and so flavorful...a little goes a long way!
Just toss everything together and you have the same salad for 305cals...I just saved you close to 100cals, You're Welcome ;)You could add other greens to this as well as other veggies I just like it plain but it's up to you.
If you have any recipes that you needed skinnified, let me know & I'll give it a go!

Skinny Recipes

So this week I embarked on making some comfort foods of mine, healthy...here is how I did!
Turkey Pot Pie
So my husband smoked a whole turkey over the weekend & we had sooo much leftovers that I had to come up with something & since the weather has been a bit cooler & hello?!!! It is fall I made a comfort food..Turkey Pot Pie.
1lb Turkey Breast cooked
1bag frozen mixed veggies (i used the birdseye corn, green beans, carrots)
4 small red potatoes,cubed
1can 98% fat free cream of chicken
1/2can 98% ff cream of mushroom
1cup chicken stock
Salt & pepper to taste
1can Pillsbury Biscuits, flattened out
Saute the veggies until tender. Add the turkey & soups & chicken stock & let simmer for about 15min. Then pour into baking dish and top with biscuits. You can omit these & just do mashed potatoes or even healthier, mashed cauliflower! I went biscuits cause I wanted that comfort level & the calories....
Bake at 375' till golden brown! Only 332 calories & serves 8 people....
So next recipe is one I found on Pinterest...love me some pins!!
Cheesy Quinoa
Some of you may not know what this is but it's freakin awesome & healthful all on it's own...but I jazzed it up with some cheese & broccoli & it's heavenly.....
1cup dry Quinoa
1cup chicken stock
1cup water
1/4 of a brick of sharp chedder, i used cabot & go for sharp for that full flavor
1cup frozen Broccoli
1/4cup Egg Beaters
10squirts butter spray & if you didn't know "squirt" is a technical term(that's what she said, lol)
Salt & pepper to taste
So the way to add a bit more flavor to the quinoa is to add a bit of stock, you can use this tip for whole wheat pasta as well! 2 to 1 ratio on the quinoa so 1cup water & 1cup stock & 1cup quinoa, bring to a boil then cover, simmer & fluff. Once cooked, add cheese & 5 squirts of butter then add the egg nice & slowly so it doesn't scramble. Then add broccoli & put into a pam sprayed baking dish. I added a sprinkle of breadcrumbs & 5 more squirts of butter & bake at 350' till golden brown. Only 195 calories & serves 4 as a side, or you can make it a meal & serve 2 for just 390cals & over 20grams of protien, which is what i will be doing tonight!
Share my blog & try out these recipes!
Enjoy

Some Healthy & Not So Healthy but F'n delicious recipes

I'm italian so I practically bleed marinara sauce and I absolutely looovvveee stuffed shells, but they aren't exactly figure friendly...until now bitches!
So what you do is, take your pasta shells and cook till slightly soft then drain and cool. The mixture inside is usually a bunch of cheese & egg & fat so I lightened it up a bit by using sweet italian sausage! You start by browning the sausage out of the casings, add some diced onions, shredded carrots, frozen spinach (thawed), italian seasonings to taste & a little light riccota cheese to bind everything together. Stuff this mixture into your shells & bake at 350' for 40minutes ~ Delicious! I will be making these tomorrow night for dinner.
The next recipe is the not so healthy but freaking awesome! They are called Slutty Brownies & thats because they are oh-so naughty! You take chocolate chip cookie mix and make as directed then squish it into the bottom of a wax paper lined pan then line the cookie dough with double stuff oreos, you should be able to get 4 down & 4 across. Then cover with brownie mix and bake at 350' for 30min. Cool in the pan for about 15min then lift out and cut...they are so gooey & awesome is probably the best word and no, I have no idea how many calories they have nor do I care...
You can wipe the drool off your face now...oh wait, here's the pic!

Just a little recipe for your morning...

So I make these all the time. They are soo good & only 250 calories so I thought I would share the recipe with you. They all start the same: Sausage, Shredded Potatoes, Cheese & Egg Beaters & you can add whatever else you want. If you have a smartphone, download the app My Fitness Pal. You can scan in items you eat & cook with to create recipes & everything. This is also where I keep track of my food.

So here is the recipe:

1 12oz container Pork Sausage, cooked
1/2 bag of Shredded Potatoes
1/4cup Shredded Cheese
1cup Quinoa, cooked
1container Egg Beaters

Cook the sausage through adding seasoning as needed. Then add the quinoa and cook for another 2 min or so. This is also the place where you can add veggies & anything else you like. Once cooked, pour into a bowl and add the potatoes & cheese. Pour into muffin tins, make sure to spray a little Pam on them! Pour the egg beaters over the top and bake at 425 for 10mins then knock down the temp to 375 and cook for about 5 more minutes & your done!
This recipe makes 9 so you will have some extras that store perfect in the fridge till you need them. Quick & easy breakfast!

Enjoy!
